Homemade light, crispy pastry filled with Boneless rabbit cooked in a traditional rabbit sauce of garlic, onions, seasonal vegetables, fresh tomatoes & peas. Sprinkled with cheese & fresh herbs, then oven-baked .
Ftira tal-Gbejniet Friski u IrkottaGoats cheese Fitra
Filled with fresh goats cheese, ricotta, lightly beaten eggs & fresh parsley. the pastry is sprinkled with sesame seeds before before baking. (Maltese Gbejniet is similar to Italian ricotta - a fresh, soft, mild white cheese)

A traditional village recipe- of pastry stuffed with sundried tomatoes, anchovies, sliced potato, fresh tomatoes, fresh herbs, cheese, onion, eggplant, olives & capers. This ftira is drizzled with olive oil before being oven-baked.

Spicy Chicken- this ftira is bursting with chunks of chicken breast, a spicy fresh tomato sauce, chilli, curry, onions, eggplant, olives & cheese topped with whole black peppercorns.

Creamy Chicken- Hand Kneaded and rolled dough is filled with sliced chicken breast cooked in a cream sauce with a mild curry flavour. Added to the sauce are carrots, onions, garlic and a sprinkling of cheese.
Ftira tal-MakkuThe Whitebait Ftira
This ftira comes from an old fishermans recipe, popular among the locals of nearby Gnejna Bay. First whole whitebait is fried with onion, garlic & fresh basil. The Fitra is then filled with this mixture, then layered with potato, topped with olives and drizzled with olive oil before being baked.
